





Circassian Poached Chicken with Walnut Sauce
We found the inspiration for this dish in a library book on Turkish home cooking called The Tree of Life. The dish was popularized in Turkey by the Circassian people, who settled there in the 18th century from their homeland between the Caspian and Black Seas.
For our version, Chef Ron will gently poach Miller Farms chicken breasts in stock. The tender meat is shredded and tossed in a sauce made with a panade (milk-soaked bread) and walnuts ground with garlic, coriander, and allspice. We’ll send along a side of walnut oil infused with Aleppo pepper to drizzle on. Also served with green beans slow cooked in the Turkish style in olive oil and lemon juice with tomatoes and onions.
