The inspiration for this meal comes from Andalusia, known as the bread basket of Spain. Choose between a 4 ounce filet of Canadian salmon, a boneless, skinless Miller Farms chicken breast, or tofu seasoned with Spanish favorite smoked paprika. We’ll keep the Mediterranean flavors coming by serving this meal with a pasta salad featuring roasted red peppers, soft and buttery marcona almonds, and a sherry vinaigrette.

A note on salmon sourcing: At home, we love the US wild caught salmon from the farmer’s market “Salmon Guy” (Wild Alaska Salmon & Seafood Company). However, we felt that the price point for their large fillets would be much too high. We’ve talked with the company that distributes this Canadian salmon and verified that it has three different aquiculture certifications, including the one recommended by the Monterrey Bay Aquarium Seafood Watch. These certifications mean that their entire process is monitored and known to be safe, sustainable, and ethical.
